Ghastly Green Slime Shake
(a.k.a. Green Shake)


This drink is neither ghastly nor slimy as the name suggests.  It's just a fun Halloween name when you have kids and cool Halloween cups to put it in.  The shake itself is actually quite yummy and VERY versatile.

1 cup rice milk
1 heaping cup spinach leaves, rinsed and loosely packed
1 cup green grapes, rinsed
1 apple, peeled, cored and sliced
1 tbsp. milled flax seed
1 tbsp. wheat germ
1 tbsp. agave nectar

It's pretty simple.  Add all the ingredients to blender.  I'd start with the rice milk.  You can choose to use soy or almond milk instead.  Both are delicious but I find they are a bit too thick for me and rice milk, in my opinion, is a bit sweeter naturally.  After that, the choice is up to you.  I like to add the spinach first (very loosely so it blends more easily) then the rest in the order I listed them.
The best part of this drink is that you DON'T have to follow this!  Obviously, I suggest you try it once so you get the basic idea but after that the options are endless.  I have added bananas, kiwi, avocado, kale, vanilla.  It's the perfect drink to alter to your preferences!  The only advice I have is to stick with the 2 fruits to 1 leafy green ratio.  Keeps the drink balanced.



Vegan Pancakes




2 cups unbleached AP flour
1 tsp. baking soda
1 tsp. baking powder
2 cups almond milk (I use unsweetened)
2 tbsp. canola oil
2 tsp. vanilla
3-4 tbsp. raw sugar

Sift all the dry ingredients, minus the sugar, into a medium bowl.  In a larger bowl, whisk the wet ingredients along with the sugar until mixture gets frothy.  Add the dry to wet and mix until "just blended".  Do not over mix.  If you are adding anything to them (chocolate chips, fruit, etc.) now is the time to do it.  Lightly oil a pan or skillet on medium/high heat.  Careful, too hot and they won't cook right.  Not hot enough and they take FOREVER to brown.  Cook until the batter starts to bubble then flip and cook for another 2 to 4 minutes.
I usually just top with or dip into agave nectar, though, sometimes I get a little crazy, get a little fancy pantsy (which is what's in the second picture) but whatever I choose I ALWAYS make sure that I get weak in my knees when I eat.  THAT should be your goal.  Have fun with your food!  Even something as basic as pancakes.
